Christmas Cookies - Lemon Balm Lemon Shortbread

The prep time is worth it for Christmas Cookies that pair nicely with a hot beverage like herbal tea. Our family has been giving our Kitchenaid mixer a run for its money with well mixed recipes every time. Back to these holiday cookies for a piece of joy we all need in our new normal.

Lemon Balm Lemon cookies take 2 hours and 15 minutes from make to bake which gives time for outdoor fun with the soccer ball. Maybe even shoot some hoops with the basketball. Whatever you do with your 2 hours of dough in fridge time is up to you.

The roll of an angel to get these cookies into a nice shape for slicing the dough.Yes, slicing these cookies were sliced, pretty cool. Well I guess it’s about time to give you the list of ingredients to make these for your holiday festivities.

These lemon cookies are a tasty citrus shortbread. 


½ cup of butter, salted 

½ cup of swerve confectionery sugar 

1 cup flour (substitute for ½ cup coconut flour + ½ cup almond flour)

4 tbsp Lemon Balm chopped 

2 tsp fresh lemon zest 


Preheat the over to 350°F 

Use a medium size bowl to beat together the butter, chopped herbs, fresh lemon zest, and sugar until the ingredients are well mixed. Add in the flour and mix them well with hands to form into a blended blob of sorts. Once the dough is smooth and together use parchment paper to roll the dough into a cylinder shape. As the roll comes into a cylinder shape, wrap it tightly with parchment paper and chill in the fridge for 2 hours. 

After chilling for 2 hours, slice into ¼” thick slices. Place on parchment paper about an 1” apart from one another. Place in preheated oven for 8-10 minutes but check after 6 minutes depending on the heat of your oven.
